We didn't grow zuchinni this year, but a friend gave us a huge specimen. I stuffed 1/2 for dinner, froze 2 shredded cups and then baked a bread almost like yours except used brown sugar instead of white, no vanilla, and twice the cinnamon. I tossed in a handful of cocnut also since I had no nuts in the house! Made two yummy loaves, one of which went in the freezer for later enjoyment.

My husband and I are both fans of dark brown sugar for the extra flavour it seems to impart. Try the variation sometime and let me know what you think.

Yum! I like zucchini bread. It's very strange, but I've never been able to grow zucchini. Thankfully, my neighbors are usually generous. :)

I think you SHOULD try out for Next Food Network Star. I have been watching and recording every episode on the DVR. Actually I watch them more than once, when the news gets to stressful, push that DVR button and check out one of the episodes.

Recipe looks yummy and if it is anything like your strawberry pie, preserves, kabobs and every other yummy recipe you make I'm sure I will love it.

You know I love to cook too! I'm big on converting really yummy recipes to low fat. I love Aaron McCargo's recipes and Alton Brown wing recipe makes the most crispy un-breaded chicken wings I have ever had.

I saw you are overwhelmed with zuchinni and tomatoes, go farmsteadleady. After a 2 week vacation, my sweet potato vines tried to take over, watermelon vines doing great, tomatoes.... ground was very dry, they are there but green, Kale older plant fine, Cabbage moth/worms destroyed the younger kale - looks like lace! String beans and hot peppers, parsley and time - good consistent harvest.

Zuchinni's still a flower :(

Go for it!!!

Big, fat YUM. I LOVE zucchini bread. :)

I've never been much of a baker. I'd just started teaching myself how to bake when I decided to go on a diet...now, I don't bake because I'd gobble it all up!

When the day comes for me to once again attempt baking, I'll have to remember you have this recipe here!
